You may remember that Colleen tried this recipe on June 6th. I decided that it looked like a healthy vegetarian side that Tyler and I would like.
Colleen could not have been more right. These boats are delicious! I was skeptical because I don't love zucchini unless it is in other dishes. The cheese and the bread crumbs make this vegetable melt in your mouth. I will for sure be making these again and highly recommend you make them for your family.
